Mookies
Mookies. What are they? They are cookies in the shape of a cow. Why a cow I hear you ask? Because cows rule. The recipe is a simple one but the fun is in the decorating (and eating). Just look below to see what I mean.

Ingredients
You will need:
125g unsalted butter
125g caster sugar
1 large egg
½ tsp vanilla extract
250g plain flour
1 tsp baking powder
150g Icing sugar

The mixture makes about 35 cows. Some cows may go missing during the icing stage (eaten), so you'll probably end up with about 30 in reality.

Method
1) Mix the butter and sugar together until light and fluffy. The texture should be smooth and lump free. Beat in the egg and the vanilla extract.

2) Sift the plain flour in a seperate bowl along with the the baking powder. Mix together and then add to the sugar/butter/egg mixture. Work in the flour until the mixture thickens into a dough.

3) Using your hands, knead the dough onto a floured surface and leave in a ball shape. Use the rolling pin to flatten out the dough and wrap it in cling film and place it in the fridge for an hour to chill.

4) Preheat oven to 170°C (gas mark 3). Take the dough out of the fridge after an hour, remove clingfilm and flour it on both sides. Roll out to a thickness of 3-5mm and cut out shapes of your choice (cow!).

5) Place (cow) shapes on a non-stick baking tray and place in the oven for 10-12 minutes. Once the cookies are in the oven, do not open the door. Once the cookies are slightly golden, remove and place on cooling rack.


6) Once cookies are cool enough (10 minutes) - you can begin to ice them. Sift 150g of icing sugar into a bowl, add about a tablespoon and a half of water and mix together until the mixture is of a smooth consistancy. Use the back of your spoon to spread the icing onto the cookie and distribute evenly.

7) Leave the icing to set (about 10-15 minutes) then if you're feeling creative, use icing pens to decorate cow cookies in any design of your choice. Have fun - this is the best bit after eating them.
